Chillan ji Kadi

Sindhi cuisine has different dished for lunch and dinner.There are lot of dishes that we eat only for lunch.The Chillan ji kadi is one such curry. Chillas are mini savory pancakes made from Bengal gram flour or Besan as popularly known as,These mini pancakes are submerged in a gravy, where these pancakes become soft and taste really good.Along with this I served Karele ji Katt.

Karelas are bitter gourd.while making these we throw away the peel, but here I have used them for a  dry saute , and a wonderful side.I shall be posting the recipe very soon.

Chillas
1/2 cup gram flour
1/2 onion, finely chopped
1 green chilly, finely chopped
Coriander leaves
Pinch red chillies
Pinch cooking soda
Salt to taste
Mix all the ingredients.
Make a pan cake batter by adding water gradually.
Heat a non stick gridle .
With the help of a tsp pour spoon gulls of batter, making mini pancakes.
Drizzle oil, flip over and drizzle oil on the other side too .
Cook till golden.
Immerse these in water.

Gravy
2 onions, finely chopped
4-6 tomatoes, puréed
1 tsp ginger garlic paste
1 green chilly finely chopped
1 1/2 tsp coriander powder
1/2 tsp red chilly powder
1/4 tsp turmeric powder
1/4 tsp garam masala
Heat oil in a pressure cooker.
Add the chopped onions and sauté till light pink.
Add ginger garlic paste and green chilly.
Sauté till onion is golden.
Add red chilly powder ,turmeric powder and half cup water.
Pressure cook the onions for 2-3 whistles.
Let the pressure drop down.open the pressure cooker.
The water should have absorbed .
Using a hand blender, blend the onion mixture.
Put back the pressure cooker on high flame and cook this gravy till all moisture has dried up.
Add tomato purée and rest of the spices.
Cook till moisture from tomatoes has dried .
Add a tsp of wheat flour and stir well to incorporate with the gravy mix.
Add water to get the right consistency of gravy.
Boil for a few minutes .
Add the prepared pancakes draining the water in which they have been immersed.
Boil once and then cover it with a lid for 2 minutes.
Serve with chapati
