While making sandwiches I wanted to make a platter with the Mumbai Sandwiches. What are Mumbai Sandwiches?Well Mumbai has the most amazing variety of sandwiches a person can ask for. They have the Mumbai Masala Sandwich, Activity Sandwich! Spinach and Corn Sandwich, Vegetable , oh the list is endless . From all the sandwiches I picked two of them , both potato based. On my visits to Mumbai Sandwich is the next best thing I enjoy besides Vada Pav and Sev Puri. While you stand on the road to get these made one can carefully observe the way they make these Sandwiches. Today's recipes are from my observation at the Sandwich wala.

Potatoes are a favorite with most of us.At least they are my favorite. I can actually survive on them.Sometimes I wonder what if ever I get diabetic? I would have to give up potatoes...Can't ever think of it. Anyway since all is well let us enjoy these Potato based Sandwiches . I shall also give you the recipe for the Sandwich Masala that these vendors sprinkle on these to get that special zing.

One can spot the Sandwich vendors at every nook and corner of Mumbai.they have a hand held toaster and toast the sandwiches in it. These hand held toasters were what we used years back but with the electric ones these are kind of outdated in homes.Even I did not have one, I asked a couple of friends and all had the electric ones, so I went and bought one. My family knows I am crazy, so did not comment but my friends...well the sandwich had to be authentic, right ? 


I made two popular sandwiches and the Sandwich Masala for this platter. The Sandwich Chutney is the same that I normally make .

While you eat a sandwich in Mumbai , you will love it for the masala these road side vendors add to the sandwich. Normally we add salt and pepper to sandwiches, but this Sandwich Masala alters the sandwich drastically. This is a Tarla Dalal recipe and I adopted it from a video at YouTube . The Sandwich Masala turned out exactly like you get in Mumbai and enhanced the  sandwich that I made for my Sandwiches with Potato Platter.

I made two sandwiches 
Bombay Masala Sandwich
Grilled Potato and Cheese Sandwich



Sandwich Masala

Ingredients
2 tsp cumin seeds
2 cloves
1 tsp whole black pepper
4 tsp fennel seeds
4 tsp dry mango powder
1 star anise
1 small stick cinnamon
2 tsp black salt
Rock salt to taste ( I added 2 tsp )

Method
Heat a pan.
Add cumin seeds, cloves, pepper corns,star anise and cinnamon.
Roast till the spices release a wonderful aroma, this should take about 2-3 minutes.
Remove from fire, let the spices cool down a little.
Grind them in a spice blender.
Add dry mango powder, black salt and rock salt.
Give it quick pulse in the grinder.
Remove and store in a jar.

You are in Mumbai you will spot small hawkers and small shops with packets of bread lying in front of them. A new person might wonder why so many bread packets, but let me tell you by evening all the bread packets are over. These vendors do not sell bread ! They sell sandwiches. If you stop by one of these sandwich joints, you will be surprised at the variety they make. They have steel dabbas with butter , chutney and potato filling. On the side fresh cucumber, onion, tomatoes, beetroot and boiled potatoes are kept. A bottle of ketchup and a Sandwich Masala shaker are a must. Yes, Cheese and Jam too are a part of this joint.

There might be these vendors at every corner, but all of them are crowded, you have to wait for your turn to order. These guys are so fast that it is unbelievable , your sandwich gets ready in a jiffy. The toasted sandwich is comparatively a new concept. These vendors have a hand held toaster and the shops might have an electric griller. The toasted sandwiches are nice , hot and filling. It is a simple sandwich but the spicy chutney and the potato filling make it special. Of course the Sandwich Masala cannot be missed.

What a wonderful and economical snack, definitely worth trying, so till you go to Mumbai, how about trying it for yourself ? Here is how...



 Mumbai Masala Aaloo Sandwich
Ingredients
3-4 potatoes, boiled and mashed
1 tbsp oil
1/2 tsp mustard seeds
Pinch asafoetida
1/4 tsp turmeric powder
2-3 green chilly, finely chopped
Coriander leaves finely chopped
Salt to taste

Other ingredients
4 bread slices
Butter
Green chutney
Onion slices
Tomato slices
Sandwich Masala

Method
Filling
Heat oil.
Add mustard seeds, let crackle.
Add asafoetida.
Add turmeric and immediately add the potatoes.
Add green chilly, coriander leaves and salt.
Mix well.

Making the sandwich
Apply butter to bread slices.
Spread a generous layer of chutney.
Place half the potato filling on one slice and the other half on the other.
Place onion and tomato slices.
Sprinkle salt.
Cover it with another chutney layered slice and toast it in a hand held toaster on the stove top.
Alternatively you can also toast on a griddle or a griller.

Toast till golden.
Sprinkle Sandwich Masala.

Many a times we have tossed veggies for dinner , I use corn, beans , carrots , onion , capsicum . While making my third variation for the Bread stick sandwiches, I decided to use the same saute, but I selected to use corn, bell pepper and onion. The lemon zest is the ultimate seasoning in this and do not miss it. If you want to make it spicy you could add chilly flakes or add some jalapeños. Choose your cheese, a different cheese makes all the difference. Bake it and you are done with your delicious sticks.


Baby Corn and Pepper Sticks
Ingredients
Bread Sticks
Roasted Pepper Spread 

(the recipe shall follow shortly )
Baby Corn ,Tofu and Pepper Sticks Sauté
Bocconcini cheese


Method
Spread the Roasted Bell Pepper spread on the bread sticks.
Place the tossed veggies on the spread.
Place the bocconcini cheese on top and bake till cheese melts.


Baby Corn , Bell Pepper Sauté
Ingredients
Baby Corn
Bell Pepper
Onion
Garlic
Lemon zest
Pepper
Sea salt to taste


Method
Cut the baby corn into small pieces.
Chop onions , bell peppers and tofu into small dices.
Heat olive oil.
Add finely chopped garlic.
Add onions, ball peppers and corn.
Toss for a minute or two.
Add tofu , lemon zest, coarsely ground pepper and sea salt.
Toss on high flame for 2-3 minutes and it is done.

The second variation that I tried was the Cherry Tomato and Olive bread sticks.
I made a black bean hummus, which served as a wonderful spread for the sticks. If one has canned beans the hummus hardly takes any time, but if making from dried beans you definitely need to plan this. 

Cherry tomatoes and olives is a awesome combo with hummus , typically Mediterranean, with some cheese on these and they were a treat to enjoy.


Cherry Tomato and Olive Sticks

Ingredients
Bread sticks
Black Bean Hummus
(the recipe shall follow shortly )
Cherry tomatoes
Olives
Shredded mozzarella cheese

Method
Spread Black Bean Hummus on the sticks.
Cut the cherry tomatoes and olives into halves, arrange them on the sticks.
Sprinkle sea salt.
Sprinkle shredded mozzarella cheese.
Bake till cheese melts.





Bread Stick Sandwiches

On the 13 th day of Cooking Carnival, and Sandwich Platters as my theme I have Bread Stick Sandwiches. These sandwiches are bite sized sandwiches, ideal for parties.

You can use any bread for these sandwiches, infact one can use different varieties of bread for different toppings. Somehow it never clicked me to do so at that time and I made the bread sticks with a regular multi grain bread.

I trimmed the edges and cut the bread into long strips, baked them to make them crisp. These baked strips can be made in advance for a party to simplify things. I made three different varieties of these, with different spreads, different toppings, and different cheeses. It was difficult to judge which one was the best. Everyone had a different liking , so I guess you will have to try all of them, yes one by one . Making all at one go is a tough job, unless you prepare a couple of things.

The basic concept of making these bread Stick Sandwiches was from Pinterest. I could not find any vegetarian options, so I just took the idea of making sticks and then working on my own spreads and toppings. 

One can get really innovative with these and these surely can be a big hit at parties.So check out what I have come up with.

Potato & Onion Bread sticks

Potato and Onion both are my favorite and I love these if they are baked.I like the crunchy golden onion slices . I normally bake these two and throw in some whole garlic and bake. Many a times this baked is our dinner along with a crisp crunchy toast. The seasoning is basic , yes oregano, chilly flakes, salt and pepper.

I love this combination, so I decided to use this as the topping for the Bread Stick Sandwiches.

For the spread I used pizza Cheese Spread ,Britannia brand, and I used cheese slices on top. Baked these and garnished with chives. 

The taste was undoubtedly amazing . 
So let me tell give you a recipe.



Potato & Onion Bread sticks
Ingredients
Bread slices, edges trimmed .
Brittanias pizza Cheese Spread 
Potato & Onion, bake
Cheese Slices
Chives

Bread Sticks
Cut the bread slices into equal sized strips.
Bake them till toasted.


Potato Onion Bake
Ingredients
Potatoes
Onions
Garlic pods
Chilly flakes
Oregano
Black pepper
Sea salt

Method
Wash the potatoes and cut them into round slices.
Peel the onions and slice them.
Drizzle oil on a baking tray and place the slices.
Throw in some garlic pods.
Sprinkle salt and place the tray in the oven.
Bake at 200 deg C for about 30 minutes or till done.

How to assemble the sticks
Spread cheese spread on the sticks.
Place the baked potato and onion.
Cut the cheese slices into triangles and place on top.
Bake till cheese melts.
Garnish with chives.

Cucumber Sandwiches

Cucumber has always been one of my favorite ingredients for a salad or to be filled in sandwiches. I love working with this veggie and there are a couple of posts I have done using this. I made some cucumber boat sandwiches while doing one of the mega marathons, then some cucumber rolls, cucumber bites . It is fun using this for Food Craft and garnishings too.

For today I have a cucumber spread. This is a spread that I learnt as a teenager. I remember making it for my friends and enjoying it with wafers as a dip. It used to feature in most of my parties and people would finish bowls of this . So I can vouch that it is one of the best tried and tested spread and a must make.

I used simple white bread for this sandwich , but you surely can use any bread. You can toast the bread and spread a layer. You can even make a sandwich and then grill it to make a Toastie. The choice is yours, but I went with these floral sandwiches.

The sandwiches look pretty with a tomato peel rose, which is very simple to make . You could check a video on this. One must apply butter on the top of the sandwich, and then place the cucumber slices and the tomato rose, this butter shall act as a glue.


Cucumber Spread
Ingredients
1 cup greek yogurt
1 cucumber, finely grated
2 cloves garlic, pounded
2 green chilly, pounded
1 tbsp cheese, grated
Salt to taste

Method
Mix all the ingredients very well and chill before using.

Ingredients
Bread
Butter
Cucumber spread
Cucumbers
Tomatoes

Method
Using a cookie cutter cut rounds from the bread slices.
Cut cucumber into slices.
Peel the tomato and make a rose from it.
Apply a layer of butter to the bread slices.
Spread a generous even layer over one slice.
Place the other slice, butter side down and complete the sandwich.
Apply butter over the top of the sandwich.
Place the cucumber slices all around and the tomato rose in the center.

Lily Sandwiches

The last in this series are the Lily Sandwiches. When I saw these on Google, I wanted to make them right away, they looked so pretty. When I made these I was not as happy with my final sandwiches. They looked average. Well, I must admit that the taste of these sandwiches was absolutely fantastic. These sandwiches would adorn any party.

I added carrots to the Greek yogurt and made a delicious spread. The bread for these sandwiches has to be cut with a round cookie cutter. Then it has to be rolled thin.after spreading the spread one needs to shape the sandwich. Spring onion has been used for the stem and capsicum strips for the stamen.


Carrot Spread
Ingredients
1 carrot, grated
1 cup greek yogurt
1tsp garlic paste
1 tbsp walnuts, ground
2 tbsp cheese, grated
Salt to taste

Method
Mix all ingredients and make the spread.







Lily Sandwiches
Ingredients
Bread
Butter
Carrot Spread
Greens from spring onions
Red capsicum strips
Method
Using a round cookie cutter, cut the bread slices.
With the help of a rolling pin, roll the round slice to 1/8 " thickness
Apply butter and then the spread.
Roll the bottom of the round over and pinch to seal.
Place the capsicum strip in the centre, pushing it a little to resemble a stamen.
Stick the spring onion greens at the pinched end to resemble the stalk.
Similarly make the rest of Lily's.

Floral Sandwiches with Greek Yogurt

This week with Sandwich platters has been one of the most interesting weeks in the Cooking Carnival. I have been working on sandwich platters and today I have sandwiches with Greek Yogurt.

I have used Greek Yogurt as my main ingredient and worked around it. I also decided to make all floral sandwiches.


Greek Yogurt is basically strained yogurt, where the whey is discarded from the curd , leaving back a thicker version of curd. Arabics call it Labneh and use it widely in their cuisine. We also call it hung curd, since we put the curd in a cheese cloth and hang it to remove the whey. For one of the previous marathons I made home made Labneh, I even tried making Labneh balls with a Arabic herb called Dukkah. Greek yogurt is a real versatile ingredient and one can really play around with this. One can make different dips , use it in salads, make kebabs, the list is endless.

For today I have three flower shaped sandwiches with different fillings. These all taste different even though the basic ingredients are the same. It is the herbs and seasonings that alter the taste of these sandwiches. I have used simple white bread for all the sandwiches.



These sandwiches would be perfect for any party, they look pretty too. One can make these in advance and pack them well in a deep box with a cling film. I was very happy with both Cucumber and Beetroot sandwiches but not very happy with the Lily Sandwiches, the taste was fantastic but it did not come out as neat as I expected. We could use these spreads for regular sandwiches too and they would be perfect for carrying for picnics or even for a lunch box. It is the spread that has to be delicious , the shape could be whatever one fancies.

Beet Root Yogurt Sandwiches

I love beetroot for its earthy look and flavor, I love beetroot for its deep color and I love it for all the health benefits it provides. It works so well as a food color, as garnishing . My friend Archana has done a beautiful post on beetroots and has compiled all beetroot recipes, so do check them , you will be amazed at her effort .

I wanted to make daises for the beetroot sandwiches , but realized did not have a cutter to get that shape, so just went on with a simple flower. I made a beetroot spread which had greek yogurt as the main ingredient. I added beetroot puree to the yoghurt, but never puree a raw beetroot, it will separate the water, I boiled the beetroot and then puréed, this gives a smooth puree. If you wish to bake, you can even bake and then puree. Mayonnaise is another versatile ingredient , I added this and some seasoning to the mix. These sandwiches look pretty and are healthy as well.


Beetroot Spread
Ingredients
1beetroot
1 cup greek yogurt
2 tbsp garlic mayonnaise
Pinch white pepper
Salt to taste

Method
Boil the beetroot, peel and grate it.
In a bowl add the grated beetroot, greek yogurt, mayonnaise, salt and pepper.
Mix well .





Beetroot Sandwiches
Ingredients
Bread
Butter
Beetroot Spread
Mint for garnish

Method
Cut 2 bread slices using a flower shaped cutter.
Apply butter.
Taking a smaller flower shaped cutter, cut the center of one of the slices.
Apply the beetroot spread on the first slice.
Place the second slice on top.
You shall see the beetroot spread from it.
Glue a mint leaf on one side with the help of butter.
Make more sandwiches in the similar way.

For the last day of this week I have a sandwich platter where I have a Dessert Sandwiches. I conceived the concept of Dessert Sandwiches from Japan. It was way back, nearly ten years back when I first visited Japan and it is then that I had one of these sandwiches. I fell in love with the sandwiches and wanted to replicate them. Finally I have !

Years back we used to serve a dessert using bread and the idea never appealed, never could think of adding cream as a spread to bread, or for that matter chocolate and bread. Time changes and with it the taste buds too change. New concepts, new combinations come up.I observe that chocolate and bread is the most hit combination, My grand kids love it and to be honest so do I. 





Another of my favorites is caramel and spreading it on bread is absolutely delicious.  I made home made caramel. This was the first time I tried spreading caramel on bread and I was surprised that it tasted so divine.

Chocolate slices are a new addition to my favorite ingredients. I simply love these slices as they are fantastic to work with. We can use them in sandwiches, over sandwiches and grill, it melts beautifully !

For this dessert platter I have made three different sandwiches 

I served these with chocolate fondue and fruit bits.
The platter was a treat by itself and since these were mini bite sized sandwiches no one felt guilty. Dipping them into the fondue was absolutely sinful .

Fruit Sandwich

The idea of making the platter came from these Fruit sandwiches . On every visit to Japan I must have these sandwiches. The bread there is super soft and the sides are neatly trimmed. A generous layer of whipped cream is spread , slices of fresh or canned fruit are placed , the sandwich is packed with another slice which too has a generous layer of whipped cream. The cream is very mildly sweet and has a hint of vanilla flavoring.

The fruits that are normally used there are strawberries, kiwi , canned pineapple and canned oranges. I made these using strawberry and canned pineapple. The strawberry season was over but while on my trip to Delhi I got a big box of strawberries from my brother who flew in from Hong Kong. I prayed that the strawberries would last by the time I would get back. I used a special white bread which has a thicker slice and is very soft, though not as soft as the Japanese one. 

Let me give you the ingredients as there is no recipe as such

Fruit Sandwich
Ingredients
Fresh bread, crust less
Butter
Whipped cream
Fruits ( fresh strawberry, kiwi, canned pineapple, canned oranges )

Method
Apply a thin layer of butter on two slices.
Spread a layer of whipped cream .
Place the chopped fruits.
In case using canned, place these on a kitchen roll and remove all the syrup.
Top with the other slice which has been spread with whipped cream.

The cream that I have used is already sweet and has vanilla flavoring.
In case the cream that you are using is not sweet, add some icing sugar and vanilla extract to it.
Make sure the cream is chilled and even the fruits are chilled.
Else you could cling wrap the sandwiches and place them in the fridge.

Chocolate & Mango Sandwich

Chocolate slices are so much fun to work with. These are just like cheese slices, individually wrapped and available in a pack of five slices. A couple of months back these were available only in Japan, I am not sure if now they have been marketed else where. I , of course picked these from there.

These mini sandwiches are made with these chocolate slices and mango slices.
Chocolate and Mango is an ultimate combination, next to chocolate and strawberry. Since I had used strawberry for the fruit sandwich, I decided to use mango for this one.

I made very thin slices of mango using my vegetable peeler. The sandwich tasted amazing , but the humidity left its imprints.

Anyway here is what you need


Chocolate and Mango Sandwich
Ingredients
Bread slices
Butter
Mango slices
Chocolate slices

Method
Cut the bread with a square cookie cutter.
Apply butter on one side of the bread slices.
Place a chocolate slice.
Place a mango slice.
Place another chocolate slice.
Top with another slice with buttered side down .
You could cut chocolate slices and decorate .

Caramel and Walnut Sandwich

Caramel is one of my favorite flavors and I love home made caramel. I normally love to keep a small jar in my fridge. It's toffee like lingering flavor is literally to die for. This is a sandwich which I did not plan, it just evolved from all of my favorite ingredients from my cake accessory box. I must tell you that I have a box which has lots of small packets which would normally be used for cakes or cookies. 
So check out what this sandwich has -


Caramel and Walnut Sandwich
Ingredients
Bread
Butter
Caramel sauce
Mixed peel
Caramelized walnuts ( crushed)

Method
Apply butter to the bread slices.
Spread caramel sauce on them.
Sprinkle mixed peel and crushed Caramelized walnuts.
Bring together both the slices to form the sandwich.
Cut into pieces .
Garnish with chocolate chips.

Note
Since I was making mini sandwiches I cut the bread with a square cookie cutter and then made the sandwiches . I did not want make the sandwich and then cut as the caramel would have oozed out while cutting.

Lava Loaf Sandwich

Cooking Carnival moves on to yet another week. 

This week I am making a variety of different sandwiches but with a slight twist. I have tried not to make the traditional sandwiches.For the first day of this week it is a Lava Loaf . 

This is made from a loaf which has been cut into a thick chunk. Getting a loaf here was a task for me , the bakery guys said they need to be told in advance. Normally the bread is always sliced. This year for Fathers Day we went to Mumbai to wish our uncle, and it was just for a couple of hours. We went for lunch with the family and had just about an hour before we could take our flight back. I quickly went to Natures Basket and picked up couple of breads. All different kind of breads , to present you guys with a different variety of sandwiches. I picked up some fresh herbs too, which are a rare sight here in Ahmadabad. So this bread is a special bread from Mumbai! 

Let me tell you about this sandwich.
It was on FB that my DIL saw a video, where a loaf was filled with various meats and eggs and baked. She suggested me to try the vegetarian version. My son came up with the option of pink sauce , and I knew I would add corn and capsicum to it. So the vegetarian version evolved and I made this loaf. After slicing the loaf the sauce oozed out and it reminded me of the Lava Cake, hence I named it  Lava Loaf Sandwich.



Lava Loaf Sandwich

Ingredients
One bread loaf, cut into a 5" chunks ( I made two of these sandwiches )
Save rest of the bread for some other sandwich
Butter
Stuffing
Shredded mozzarella cheese

Stuffing
1 cup pink sauce
2 tbsp onion, finely chopped
2 tbsp red capsicum, finely chopped
2 tbsp green capsicum finely chopped
4 tbsp corn kernels, boiled
1/2 tsp Italian seasoning
Salt to taste

Pink Sauce is a mix of White and Red Sauce.


Method
Cut the loaf into 5" chunks.
Leaving about 1/2" from all sides scoop out the bread from the loaf, thus making a deep depression.
Apply butter lavishly inside this depression.
Fill it up with the prepared stuffing.
Sprinkle shredded Mozzarella cheese and bake in a preheated oven till cheese melts.
Garnish .
Cut into two and you will get a wonderful lava of the stuffing oozing out.

Every time we have a Mega Marathon , I want to buy a book related to the theme. Even though we get practically everything online, we really do not need to buy these books, but collecting Cookery Books is my passion. So for Cooking Carnival I went around looking for a interesting book on sandwiches. Apart from our few indian authors all I could get was non veg stuff. Finally I got a book by Nita Mehta which is on Burger and Sandwiches. The book has some interesting sandwiches but I picked these Sandwich Cases from it. I made some changes to suit my taste.


These cases with sprouts and tamarind tasted mind blowing. In fact They reminded me of the Delhi streets where we get these spicy sprouts. And these cases , they are so versatile , just perfect for a party. They can be made in advance and different fillings could be used. Even the oil mixture can be made with different herbs. Truly a recipe worth trying.





Sandwich Cases

Ingredients
1 loaf

3 tbsp olive oil
1 tbsp coriander leaves, finely chopped
Pinch salt
Pinch coarsely ground pepper

Filling
1/4 cup pomogranate pearls
1/2 cup Moong sprouts, boiled with salt
2 tbsp Imli chutney
1 tsp lemon juice
1/2 onion, finely chopped
1/2 green chilly finely chopped
Point and coriander leaves finely chopped
Salt to taste

Getting the cases ready
Mix olive oil, coriander leaves, salt and pepper.
Try the crusts from bread.
Cut a bread loaf into 4" thick slices .
I further cut it into two .
Scoop out centre from each bread, thus making it into a canapé or case.
Brush these cases with the prepared oil mixture .
Place on a baking tray, bake for 15 minutes at 180 deg , the cases should be nice and golden.

Filling
Mix all ingredients under filling.

Assembling the cases
Spoon the filling into the baked cases and serve immediately.

Moroccan Smashed Chickpea Sandwich

The mega marathons leave us with some recipes which get featured in our regular menus. When we did Around the World , I made a Moroccan Chick peas Salad and that salad was a big big hit.I wanted to use that salad for a sandwich, so I smashed this salad a little and filled it up in mini focaccia bread . I had served greek yogurt with the salad but for this sandwich I spread a nice layer of tzatziki sauce, which gave a wonderful taste to the sandwich besides making it moist.

Tzatziki is a sauce which is just like a cucumber garlic dip , but with a little difference. It is a dip normally made from strained yogurt, made from either sheep or goat milk, though I made the yogurt from the regular milk packets that we get. The sauce turned out really delicious, sadly the pictures are not doing justice. I shall be doing a separate post on this sauce with better pics.



Moroccon Smashed Chickpea Sandwich
Ingredients
Focaccia bread
Moroccon salad
1 tbsp olive oil
Tzatziki sauce
Finely chopped spinach

Method
Smashed the chickpea salad.
Cut the focaccia in half horizontally.
Spread a layer of spinach.
Sprinkle salt and drizzle olive oil.
Spread a nice layer of the smashed chickpeas.
Top with tzatziki sauce.
Cover with top half of the bread.
Cut into two to serve.

We are into the 4th week of Cooking Carnival and for this week I am making non traditional sandwiches. These are sandwiches which are different than the normal bread butter and filling between two or more slices.Today's sandwich is a sandwich which is threaded on a Skewer. I made mini sandwiches with different breads and one can really get innovative with these sandwiches. I made three different variations and it was actually fun creating and eating them. While making these sandwiches we should make sure that the bread should be cut into mini bites, else it gets hard to eat, plus the skewer is not able to hold the sandwich firmly. There is no particular recipe but I will tell you how and what went into making these different sandwiches.



Ingredients for the first sandwich
Brown bread
White bread
Butter
Carrot slices
Cucumber slices
Cheese slices
Cherry tomato

Trim the edges of the bread .
Apply butter and sprinkle some seasoning.
Cut into bite sized pieces.soak the lettuce in chilled water, after a while pat dry on a kitchen napkin .
Slice the cucumber and carrot.
Wash the cherry tomatoes.
Take a skewer , fold and thread in the lettuce leaf.
Next thread a brown bread sandwich, carrot and cucumber slice go in next.
Thread in a white bread sandwich .
Roll a cheese slice and thread it finishing it with a cherry tomato.



For the next variation
Brown bread
White bread
Butter
Cucumber slices
Capsicum dices
Olives
Herbed cottage cheese cubes

Trim the edges of the bread .
Apply butter and sprinkle some seasoning in one of the sandwiches.
Place a cucumber slice in the other mini sandwich.
Take a skewer and thread a red capsicum dice, next a brown bread sandwich.
Thread in a cottage cheese cube, followed by a cucumber sandwich.
Diced yellow capsicum goes next which is finished by a black olive.



The third variation that I tried was with fruits and chocolate.
Brown bread
White bread
Butter
Nutella
Kiwi cubes
Pineapple cubes
Strawberries


Using a round cookie cutter cut the brown and white breads .
Using the white and brown breads cut mini squares too.
Spread nutella on one of the round breads and make a sandwich.
Spread butter on the other round sandwich filling it up with strawberry slices.
The third sandwich is with brown and white bread with nutella filling.
Now take a skewer, thread in a nutella round sandwich, then a kiwi cube topped by the strawberry sandwich.
Next you thread in a pineapple cube, finish with the mini nutella sandwich.

Fried Vermicelli Sandwich

When I decided on making Sandwiches for Cooking Carnival, I wanted to document some family favorite sandwiches. When I say family favorite, I mean favorite recipes of all different members.This particular sandwich recipe was given to me by DIL. We made this sandwich for the first time and everyone at home loved it. Yes it was fried, yet everyone enjoyed it. In fact the first two sandwiches disappeared in seconds. I served the sandwich with a salad and watermelon juice. This is a snack but we had it for our lunch . One can make a mini version of these sandwiches too, they would be perfect to serve kids.

So here is another Sandwich with a Twist on the 20th day of Cooking Carnival.


Fried vermicelli sandwich
Ingredients
2 slices bread
1 tbsp green chutney
1 tbsp tomato ketchup
1/4 cup potato mix
2 tbsp lentil mix
2 tbsp corn flour
1/2 cup vermicelli
Oil to fry

Method
Using a round jar lid cut the bread slices.
Apply green chutney on one slice and ketchup on the other slice.
Make a round Patty with the potato mix, just the size of the round bread slice.
Make a hole in the Patty, just like one makes in a donut.
Place the patty on the ketchup layered slice.
Fill the gap with the lentil mix.
Top with the chutney layered slice. Chutney side down.
Make a thin paste of cornflour and water.
Spread the vermicelli on a plate.
Heat oil.
Now dip the prepared sandwich in the cornflour mix , coat with the vermicelli and slide in the hot oil.
Deep fry the sandwich to a golden.
Serve hot.

Potato mix
Ingredients
1/2 cup boiled, mashed potato
1 green chilly, finely chopped
Coriander leaves
Mint leaves
Few drops lemon juice
Salt to taste

Method
Mix all ingredients .

Lentil Mix
Ingredients
2 tbsp Moong, boiled
Pinch red chilly powder
Pinch dry mango powder
Coriander leaves
Salt to taste

Method
Mix all ingredients.











The sandwich has a medley of flavors, its spicy, slightly sweet and very very crunchy ! Along with a salad and some juice it makes a fantastic meal.
